Is it worth upgrading from 105 to Ultegra
If you're on a budget, and are just squeaking by, and need to save for it, well, no, it's not really worth it. Shimano does an excellent job of making sure the performance between Dura-Ace, Ultegra, and 105 is pretty much on par. The major difference is weight. Ultegra weighs less than 105 and shifts a bit smoother.

Why is Ultegra better than 105
There is a difference in the materials used. Ultegra dual control levers have carbon-fibre reinforced plastic brackets and main levers while 105 has glass-fibre reinforced plastic brackets and aluminium main levers. The 105 levers are a little heavier but you won't notice any difference in performance.6 May 2021
Can you replace Shimano 105 with Ultegra
Assuming you're working across compatible families, this is certainly possible. I've done this myself, with my 10-speed 105 5700 groupset. When I knackered the front derailleur, I replaced it with the equivalent Ultegra version (10-speed 6700).5 Oct 2020
