Converting an 8-speed wheel to 11-speed
You will have to buy a new 11-speed wheel and replace the entire wheel. On the other hand, if your current wheel is an 11-speed wheel, you can change to 11-speed by removing the low spacer from the low side of the 8-speed sprocket and installing an 11-speed sprocket.

11-speed MTB hubs also use 135mm spacing unless the system is boosted in which case the dropouts have to be even further apart. Therefore, if you're trying to combine an 11-speed hub with a 7-speed cassette on a 7-speed frame, you will face a compatibility issue – the hub won't fit into the frame.

And in case any of you were wondering, if you have a 10-speed Shimano or SRAM system and buy a wheelset now, you can still run 10-speed cogs on that wheel. To put a 10-speed cogset on an 11-speed freehub, you just put a spacer behind the largest cog.

10 speed and 7 speed bikes have the same dropout spacing: 135 mm. Your issue will be with the rear wheel – you cannot fit a 10 speed cassette on a 7-speed wheel (you can go the other way with a spacer). If you want to upgrade from 7 to 10 speed, you will need a new rear wheel and new shifters at a minimum.
